Vegan Baked Camembert with Maple Syrup, Blueberries, and Walnuts.
This Vegan Baked Camembert is creamy, dreamy, and oh-so cheesy! It’s the perfect Valentine’s Day treat to share with your S.O. or even better, it eat all alone. This cheese recipe is simple and easy to make, so also great as a last minute snack for parties or as an indulgent weeknight dinner.
Listen, if you are a fellow cheese lover, I don’t think I have to explain to you why you have to try this Vegan Baked Camembert. This warm, stringy, cheesy ‘camembert’ (or baked cashew cheese, if you prefer) is just really good. Trust me.
This Vegan Baked Camembert was inspired by this genius recipe. I adjusted it a bit to my liking, and topped it with some blueberries, walnuts, thyme, and maple syrup. You can of course omit these toppings, but I think the caramelized blueberries and toasted walnuts work extremely well here.
You can try other toppings as well, such as other types of berries, wild mushrooms, caramelized onions and/or pears, pecans, hazelnuts, and of course garlic. They are all wonderful additions.

Vegan Baked Camembert w/ Blueberries and Walnuts
- Total Time: 30 minutes
- Yield: 1 cheese
Ingredients
· 1 cup of cashews, preferably soaked
· 2.5 tbsp tapioca flour
· 3 tbsp nutritional yeast
· 2 tbsp apple cider vinegar
· 1 tbsp white miso paste
· 1/2 tsp garlic powder
· salt, pepper
For the toppings:
· 1/4 cup blueberries
· 1/4 cup walnuts, roughly chopped
· a few sprigs of fresh thyme
· 1 tbsp maple syrup
Instructions
- Place cashews, tapioca, nutritional yeast, vinegar, miso, garlic powder, a cup of water (230 ml), and a good pinch of salt and pepper to a food processor. Blend until completely smooth.
- Transfer mixture to a sauce pan and heat over medium heat. Stir constantly until it starts to form a gooey cheese sauce.
- Line a small ramekin with parchment paper. Pour cheese sauce into the ramekin.
- In a small bowl mix together blueberries, walnuts, thyme, and maple syrup. Spoon this mix over the cheese.
- Bake cheese at 200°C/400ºF for 18-20 minutes, or until walnuts are toasted. Serve immediately. Enjoy!
