Vegan Baked Feta Pasta

Vegan Baked Feta Pasta aka the famous ‘TikTok Pasta’.

Vegan Baked Feta Pasta is the plant-based version of the viral recipe from TikTok. It’s delicious, creamy, easy to make, and just as satisfying, as the original version. Vegan Baked Feta Pasta does require about 10 more minutes of work, but trust me, it’s worth it!

I’m sure a lot of you are familiar with the video and recipe I’m talking about. The original recipe comes from a finish blogger, and was called Uunifetapasta. Now people simply refer to it as TikTok Pasta.

I don’t have TikTok, but this recipe is so popular at the moment, it’s all over social media, no matter what you use. And I get why. TikTok Pasta looks seriously appetizing.

So of course, I wanted to try making my vegan version too!

For this recipe store-bought vegan feta works great. If you are lucky enough and can buy some from supermarkets, go for it! My favorite vegan feta is from BEDDA, but Violife is really good too. They are more melty, than dairy feta, so you have to bake them for a shorter time. 5-10 minutes of baking is more than enough for them.

However I know that vegan feta is still not widely available, so I wanted to make a version with more accessible ingredients. And that’s where my trusty little Vegan Tofu Feta recipe comes handy. Boy, there’s really not a lot this recipe can’t do.

To follow the TikTok Pasta recipe, I marinated my tofu in whole, instead of smaller cubes. It looks better for pictures, but if you want more flavor, go with the cubed feta. This recipe works best, if you allow the tofu to sit in the marinade for 24-48 hours, however if you want a quicker version, 30 minutes will work too.

The type of tofu you use is a very important part of this recipe. Make sure your tofu is soft, but not silken. It should be somewhat firm, but not an extra firm one! A soft, regular tofu works best here. Pressing out the liquid of the tofu also helps with texture, and overall flavor absorption.

Once you marinated your tofu block, go ahead, and make the pasta as in the TikTok video. Add tomatoes and tofu to a baking dish, drizzle with olive oil (or the tofu marinade for extra flavor!), then add herbs, salt, pepper, and bake for 45-50 minutes. Mix with cooked pasta, and extra fresh herbs, and enjoy!

Though my Vegan Baked Feta Pasta resembles the original one a lot, don’t expect a sauce as creamy or gooey, as the original. You can add an extra handful of grated vegan cheese or some vegan heavy cream for that added creaminess, if you miss it.

Another great option is using my Baked Almond Feta recipe instead of my Vegan Tofu Feta. I have to say, this feta tastes surprisingly a lot like real baked feta. However it’s also a lot more work to make, and as I remember the point if this viral video was ‘easy’, so let’s stick with that for today.

Description

Vegan Baked Feta Pasta is the plant-based version of the viral TikTok recipe.

Ingredients

Units Scale

Vegan Feta:

  • 1 block of tofu (9 oz/250 g)
  • 2 tbsp apple cider vinegar
  • 1.5 tbsp olive oil
  • 2 tbsp nutritional yeast
  • 2 tsp white miso
  • 1 tsp garlic powder
  • 3/4 tsp salt

Pasta:

  • 500 g smaller or cherry tomatoes
  • 4 tbsp of the Vegan Feta marinade or olive oil
  • 2–3 sprigs of fresh oregano and/or thyme
  • 3 cloves of garlic, minced
  • pinch of chili flakes
  • 300 g pasta of your choice
  • handful of fresh basil
  • salt, pepper

Instructions

Vegan Feta:

  1. Optional step, but makes a big difference. Press water out of tofu. Wrap tofu with a kitchen towel and put something heavy on top. Let it sit for at least an hour.
  2. Prepare marinade. Whisk together vinegar, oil, nutritional yeast, miso, garlic powder, salt, and about 3.5 oz/100 ml water in a small dish, where the tofu would fit.
  3. Place tofu into the marinade, and let marinate for at least 30 minutes, or 24-48 hours for the best result.

Pasta:

  1. Preheat oven to 200°C/400°F
  2. Place tomatoes and Vegan Feta in a baking dish. Drizzle with 3 tablespoons of the tofu marinade (or use olive oil). Place fresh oregano and thyme on top, and sprinkle with salt and pepper.
  3. Bake tomatoes and Vegan Feta for 30 minutes, then remove, drizzle with an extra tablespoon of the marinade, and sprinkle with minced garlic and chili flakes. Bake another 20 minutes, or until Vegan Feta is browned and tomatoes are soft.
  4. Meanwhile prepare pasta according to package instructions.
  5. Using a fork mash tomatoes and baked Vegan Feta into smaller pieces. Add drained pasta and fresh basil, and mix everything well together. Season with salt and pepper, if needed, and serve immediately. Drizzle with leftover Vegan Feta marinade, if needed. Enjoy!

Notes

TOFU: Make sure your tofu is soft, but not silken. It should be somewhat firm, but not an extra firm one! A soft, regular tofu works best here. Pressing out the liquid of the tofu also helps with texture, and overall flavor absorption.

So good. Made it last night. Didn’t have miso, but still worked. This will definitely go into my recipe rotation.

This is such a good recipe. I know I would eat some of the feta and tomatoes once they are baked.

There is a ban on the Tiktok app in India but I have seen this pasta become a rage with Instagrammers. I doubt I will reach the pasta stage. I would probably eat the baked feta and tomatoes on their own! 😛 It looks so good.

Hahaha, there’s no ban here, but I’ve actually never used TikTok in my life either, and also only know this recipe from Insta 😛
And yeah, I know what you mean with not reaching the pasta step 😅
