This is a super simple, freezer-friendly recipe, that’s also perfectly customizable. These Vegan Broccoli & Potato Tots require only a few simple ingredients to make, and they taste really good! They make a great main or snack with your favorite dipping sauce. Vegan, gluten-free, and kid friendly recipe!

News are coming and changing every day, and most of us have no idea what to expect. Here in Germany schools, bars, clubs, and borders are closing, supermarkets are empty, and everything feels uncertain. Life has changed fully.
On a personal level, I worry that I won’t be able to work. That I won’t earn any money for weeks or months. That we will have a full lockdown, or even worse a quarantine, and then what will happen to my dog, Laika. Or that it’s gonna be even harder to get any food, because people started to prepare for the worst.
But that’s all nothing, when you think of the real scary things. What could happen to older people. What could happen to those with compromised immune systems, and to those who are sick. And what could happen to our parents, grandparents, and loved ones…to those who are not young and healthy, like you and me.
So let’s try our best! I’ll stay home, avoid social contact, and won’t buy 55 billion packages of pasta or whatever, because I’m not the only one who needs it. Let’s do anything and everything we can to help the situation!
I feel that at the moment what I can do from home is sharing with you some tips and recipes that might be useful these days.
I wanted to start with a basic list of ‘vegan staples’, following with easy recipes using pasta, rice, beans, frozen goods, etc. However Germans went nuts in 2 days, so I couldn’t buy any of these staples anymore. The only thing left is fresh produce (also not that much), so I decided I’ll focus on these things now.
Because 1, if you can get fresh produce, you can freeze them for later, and 2, because you can cook freezer-friendly meals with those things in big batches.
My first recipe of freezer-friendly meals is this Vegan Broccoli & Potato Tots one, and in the next days I’ll share with you a whole list of other similar meals! ❤️
Vegan Broccoli & Potato Tots
This recipe is a very basic one, so feel free to add more spices and herbs to your liking to make it more special. These babies are soft and cheesy with only a little crust on the outside, but you can make them crispier if you prefer. Rolling them in some breadcrumbs before baking will add an extra crunch. Or simply deep-fry them for a real crispy version.
The consistency will depend on the type of potatoes you use. You might need to add a little extra flour in case the mixture is not shapeable enough. The recipe will also work with frozen broccoli. Simply thaw the broccoli, and press out the excess water, then rice/process in the food processor as you’d with fresh broccoli.
To freeze Vegan Broccoli & Potato Tots you have a few options:
- Shape the tots as the recipe says, then place them on a baking tray or other flat surface and freeze them in a single layer. Once frozen, you can place them in a freezer bag or box.
- Bake the tots for 20-25 minutes, then let them cool and freeze. It’s the best method if you wanna deep fry them later.
- Bake tots fully, let cool, then freeze. This way you just have to warm them up in the oven or in the microwave when you are ready to eat.

PrintVegan Broccoli & Potato Tots
- Total Time: 1 hour 15 minutes
- Yield: 30–35 tots 1x
Ingredients
- 500 g/1.1 lbs peeled potatoes
- 250 g/9 oz broccoli florets
- 2 tbsp ground flaxseed
- 50 g/0.5 cup of grated vegan cheese
- 1 tsp garlic powder
- 1/4 tsp red pepper flakes
- salt, pepper
Instructions
- Place potatoes in a pot and cover with salted water. Bring water to a boil, then cover and cook for about 15 minutes, or until potatoes are soft, but not overcooked. Drain and let cool a bit.
- Meanwhile place broccoli florets into a food processor, and pulse until you get a rice like consistency. Transfer broccoli onto a kitchen towel and squeeze out any excess water.
- In a small bowl mix together flaxseed with 6 tablespoons of water. Let rest for 5 minutes to thicken.
- Once potatoes are cool enough to handle, grate them on the large side of a box grater into a mixing bowl. Add broccoli, flax gel, vegan cheese, garlic powder, chili flakes, and a large pinch of salt and pepper.
- Mix everything well together with a spatula or your hands. If mixture seems too soft, add a few tablespoons of flour to thicken. Place mixture in the fridge for at least 20 minutes.
- Using you hands shape about 1 tablespoon of the mix into a cylinder shape, and place it on a parchment paper lined baking tray. Repeat with the rest of the mix.
- Bake Vegan Broccoli & Potato Tots in a preheated oven at 180°C/360ºF for 40-45 minutes, flipping halfway. Serve immediately, or in case you have a very melty vegan cheese, let them firm up for 10 minutes before serving. Enjoy!

I’m thinking of my dog too. He is used to having his two walks every day. I really hope we are not going to have to go into lockdown. It’s annoying that people are not a bit more considerate, buying what they need, travelling only for good reasons (a weekend-break in Spain is not a good reason, then they ask the government to repatriate them on our expense), and just isolate if they have symptoms. It would have been so much easier for everyone if some would have had a bit of care and empathy towards others.
Now, let’s go back to food. These broccoli and potato tots look delicious, I’d love to try them.

100% agree with everything you say. It’s infuriating to see that careless people still go out, have parties, make holidays, etc. I really really hope they will realize ASAP that they have to have more empathy towards others!
I guess a lockdown would be a good idea to keep these people out of the streets, but for our dogs’ sake I hope it’s not gonna happen…we live in a tiny flat, so my dog needs to go out to pee at least :/

The situation everywhere is same But I think we should not worry too much and just takes sensible measures to keep away from catching the virus.These broccoli and potato tots looks wonderful. we love broccoli in our house and I buy two heads every week for three people. I am certainly going to try this.
