Vegan Chickpea & Quinoa Burger is hearty, delicious and super satisfying. It’s also quick and easy to make, requiring only a few simple ingredients. These patties are tender on the inside, crispy on the outside, and are full of flavors. Try them!
We are eating a lot of burgers recently. My boyfriend was pretty excited, when Beyond Burger finally came to Germany, so our freezer has been stocked with those patties ever since. He loves it as meat crumbles on salads, pastas, etc, but of course his main love is a good ol’ classic burger. So yeah, burgers became a weekly thing in our home.
I’m personally not a huge fan of Beyond Burger, or of any meaty patties in general, they just creep me out. I have always preferred patties, that are clearly veggie patties, meaning they don’t try to resemble meats, but instead are full of veggies, grains or nuts.
So yeah, I LOVE burgers too (duh), and thanks to me not liking Beyond Meat I have come up with a few pretty good veggie patties lately. One of the bests I made in the past months must be this Chickpea & Quinoa Burger. The combination of quinoa and coarsely mashed chickpeas give such a great texture, while the cashew butter, chili flakes and fresh herbs make it taste superb!
What I probably love the most about these kind of burgers is that since you use already cooked ingredients, you can safely taste test the patties before baking, so you can play around with the flavoring however you like it. Make it spicy with lots of chili, add curry powder or garam masala, try it with liquid smoke or smoked paprika, or just use whatever herbs you have on hands. Things like parsley, chives or basil give a nice, fresh taste to these patties, while sage, rosemary or thyme are perfect for a more autumnal burger.
Usually I bake this babies for 35-40 minutes, that way they are still tender on the inside, but if you prefer, feel free to bake them a little longer for a crispier and drier version. You can also use this base to make small, crispy, falafel style balls, just make sure you adjust the baking time accordingly.

Ingredients
1.5 cups cooked chickpeas
1 shallot, roughly chopped
3 garlic, minced
2 tbsp cashew butter
1 cup of cooked quinoa
1/2 cup of chickpea flour
1 tsp mustard
1 tbsp tomato paste
1/2 tsp chili flakes
3 tbsp chopped, fresh herbs
salt, pepper
Instructions
- Place chickpeas, shallot, and garlic in a food processor, and pulse a few times, until chickpeas have a coarse texture. Transfer to a mixing bowl. Alternatively use a potato masher to mash chickpeas coarsely.
- Add the rest of the ingredients to chickpea mash, and mix well, until everything is combined. Adjust consistency with chickpea flour if the mixture is too wet, it should be moist but moldable.
- Shape the mixture into 4 patties, then place on a baking tray.
- Bake patties at 180Β°C/360Β°F for 35-45 minutes, turning them over once halfway through baking time.
- Serve patties on buns with condiments and toppings of your choice. Enjoy!

Perfect looking burgers! I am always looking for new vegetarian pattie recipes, although I am not a vegetarian, I like vegan/vegarian patties/burgers much more than meaty ones. I mostly eat them in a wrap or another kind of flat bread with lots of sriracha, tomatoes and onions. Yours look amazing and I have never made any patties with quinoa until now. A must-try!

I just tried out this recipe and I loved it. I didn’t have cashew butter so I used avocado instead and I also replaced the chickpea flour for oat flour. The result was great! Thanks for sharing!!

Hi Lynne,
I’ve never frozen these exact burgers before, but I do it often with other veggie burgers, so I’m sure it would work here too.
If I plan to freeze veggie burgers, I do it before baking. Just place them on a single layer in a baking tray, freeze until hard (1-2-3 hours), then place them in a ziplock bag or airtight container. Then bake them straight out of the freezer.
Freezing after baking works as well (I do it often if I made too many patties). The patties can get a little dry this way, so you might wanna heat them up in a pan with a little oil, and add extra condiments.

Made these for our 4th of July BBQ yesterday and we loved them! Thanks for the great recipe! I did feel like they were lacking a little bit in umami flavoring, so added in about 2 tsp soy sauce and it was just the ticket. So yummy!
