Vegan Cucumber & Caviar Bites with lemony dill cream cheese.
These Vegan Cucumber & Caviar Bites are super easy to prepare, yet they make a fantastic starter or finger food. Golden brown puff pastry squares are topped with vegan dill cream cheese, cucumber slices, vegan caviar, and fresh dill. Basically simplicity at its best.
Hey hey hey guys. I haven’t posted here a lot recently, simply because I had absolutely zero time (and often internet). I’m just in the middle of moving which means my life is super hectic and it’s really hard to find time for my blog. Fingers crossed I’ll be completely settled already next year.
So yeah, I’m in the middle of a massive kitchen renovation, but there’s no way I’d miss out posting holiday recipes for the year. I love-love-love this season, and the main reason, to be honest, is the food. Obviously. So here it comes, my first recipe idea for you for Christmas, Hanukkah, or whatever you are celebrating.
These little bites are really easy to make, yet they look so cute and taste so good, you’ll totally love them.

How to make Vegan Cucumber & Caviar Bites
- You start by unrolling then cutting your store-bought puff pastry into small squares. If your puff pastry is not pre-rolled, you have to do that first. Pierce each piece with a fork so they won’t puff up too much. Mainly for visual reasons, but I also love to score a thin border.
- Now you bake your puff pastry squares for about 12 minutes, or until nice and golden.
- While puff pastry is baking and then cooling, you prepare the toppings. Start by mixing together cream cheese, sour cream, tahini, lemon juice, dill, and garlic. Taste and adjust seasoning to you liking.
- Then you chop up some dill, and slice cucumbers, and you are ready to decorate!
- Top each little square with a generous dollop of cream cheese, then cucumber slices, dill, and vegan caviar. That’s all. They are ready to serve immediately.
TIPS for making these bites
You can use whatever store-bought or homemade vegan cream cheese you like. My personal favorites are:
- 2-Ingredient Vegan Cream Cheese (very inexpensive)
- Basic Cashew Cream Cheese (extra creamy and luscious)
- Vegan Tofu Cream Cheese (quick and cheap)
Nowadays you can find vegan caviar at most larger supermarkets and health food stores. Ikea also sells some.
If you want to make your Vegan Cucumber & Caviar Bites extra cute for the holiday season, cut out some mini stars from any leftover puff pastry. You can also brush them with a little oil and turmeric mix for a bright and shiny golden finish.
If you don’t have any leftover puff pastry, you can also cut out cute shapes from the cucumber slices.
CUSTOMIZE IT THE WAY YOU LIKE IT!
There are just about a million ways to give this recipe your own unique twist!
- Play around with the ratio and flavoring of your cream cheese. Add chili, chopped herbs, lime juice, nutritional yeast, miso paste, soy sauce, or whatever else you like.
- If you don’t like cream cheese, go with hummus, cashew butter, or mashed avocados instead.
- Choose different veggies or fruits! Paper-thinly sliced beets, apples, fennel or zucchini are all awesome options.
- If you can find some, try wasabi or chili flavored vegan caviar!
- Add extra toppings of your choice. Chopped nuts, fresh greens, dried fruits or vegan feta are all delicious.

Vegan Cucumber & Caviar Bites
- Total Time: 22 minutes
- Yield: 20 bites 1x
Ingredients
- 1 sheet of puff pastry (10 oz/280 g)
- 1/4 cucumber, halved and thinly sliced
- 2 tbsp vegan caviar
- 1/4 cup fresh dill
For the cream cheese
- 1/2 cup vegan cream cheese (homemade or store-bought)
- 1/2 cup vegan sour cream (homemade or store-bought)
- 2–3 tbsp lemon juice
- 2 tbsp chopped dill
- 1 tbsp tahini
- 1 clove of garlic, minced
- salt, pepper
Instructions
- Preheat oven to 400°F/200°C.
- Cut puff pastry into 20 equal squares (3×3 inch/7×7 cm). Use a knife to score a thin border, then use a fork to poke holes in the middle of the squares.
- Place squares on a baking tray, then bake for about 12 minutes, or until golden. Let cool for 5-15 minutes.
- Meanwhile mix together cream cheese, sour cream, lemon juice, dill, tahini, and garlic. Season with salt and pepper to taste.
- Once puff pastry squares are a little cooled down, spread cream cheese on top of each squares. Top with cucumber slices, about 1/4 tsp teaspoon vegan caviar, and some fresh dill. Enjoy!
- Prep Time: 10 minutes
- Cook Time: 12 minutes
