Ingredients

  • 1.5 cups of finely chopped onions
  • 1 cup of vegan mayo
  • 1/4 cup ketchup
  • 1 tsp vinegar
  • 1/2 tsp mustard
  • 1.5 tbsp curry powder
  • salt, pepper

Instructions

  1. Sauté onions in a skillet over medium heat until translucent, about 5 minutes. Keep adding a few tablespoons of water while sautéing, so the onions don’t burn. Let cool.
  2. In a bowl whisk together sautéed onions, mayo, ketchup, vinegar, mustard, and curry powder, and season with salt and pepper. Serve chilled. Enjoy!
