Vegan Penne alla Vodka

Ingredients

  • 7 oz/200 g penne
  • 3 tbsp olive oil
  • 1 large onion, diced
  • 34 cloves of garlic, minced
  • 1/2 tsp red pepper flakes
  • 3 tbsp tomato paste
  • 1 can of diced tomatoes (14 oz/400 g)
  • 1/4 cup/60 ml vodka
  • 1/2 cup/65 g of cashews, soaked
  • 2 tbsp nutritional yeast
  • salt, pepper

Instructions

  1. Cook pasta according to package instructions. Drain, reserving some of the cooking water, and set aside.
  2. Heat up olive oil in a skillet. Once hot, add onion, and cook for about 7 minutes, stirring occasionally, or until translucent.
  3. Add garlic, chili flakes, and tomato paste, and cook for another minute, until everything is fragrant.
  4. Add diced tomatoes to the skillet, and season with salt and pepper. Cook sauce for 5 minutes, stirring occasionally.
  5. Pour vodka over the sauce, then simmer for 1-2 minutes.
  6. Transfer sauce with soaked cashews and nutritional yeast to a blender, and blend until completely smooth. Adjust consistency with reserved pasta water, and season with salt and pepper, if needed.
  7. Mix sauce with pasta, and serve immediately with fresh parsley or basil on top. Enjoy!
