Vegan Sushi Cake is a cool twist on regular veggie sushis, and it’s also a lot easier and quicker to make than sushi rolls. It’s delicious, pretty, customizable, and an absolute must for sushi lovers. This version has all the green goodies for great flavors and texture, give it a try!
Well….I’m turning 30 next week, and as you can imagine, I’m not very excited about it. I feel so weird nowadays, it’s like my 20s went by in a second. Is it gonna be like this from now on? A blink and I’m 40, then 50, then….who knows?!
I know, I know, I am a bit too dramatic, but it’s really just so confusing. I mean I didn’t even really get used to not being a teenager anymore….and now this.
I never thought I’ll be one that complains about aging, especially because I always looked a lot younger than my age. I spent most of my teen years and early 20s wishing I’d be older, so people would take me more serious. But boy oh boy, tables have turned…
I’ll stop complaining now, because I know it makes no sense. I mean hey, 30 is actually not that bad, right? And also because there are some pretty cool things happening in my life right now. For example I’m traveling to New York this weekend with my BF, plus I made an awesome sushi birthday cake for me.
Vegan Sushi Cake
If you are like me and you’re also obsessed with sushi, plus don’t really care for sweet things, this Vegan Sushi Cake will be your new favorite thing in the world! It tastes exactly like your favorite little treat, but comes in a fancier shape, that happens to be also a lot simpler to make.
Basically all you do here is layer some nori sheets with seasoned sushi rice, and fillings and condiments of your choice. I used cucumbers, edamame, avocado, and vegan mayo here, but you can choose whatever you like: radish, raw or roasted bell pepper, carrot, asparagus, zucchini, cabbage, beetroot, tofu, tempeh…the options are endless.
Vegan mayo goes really well with this cake, however your can also keep the cake ‘dry’, and then just dip the slices in a sauce or condiment, such as soy sauce, sriracha, or wasabi mayo.
And how do you eat this baby, you may ask? I’ll be honest with you guys, those chopsticks are just decoration on the pictures, because it’s best to eat this cake with your hands!

PrintVegan Sushi Cake
- Total Time: 25 minutes
- Yield: 1 small cake 1x
Ingredients
2/3 cup of sushi rice
2 tbsp vinegar
1 tsp coconut sugar (or sweetener of your choice)
3 nori sheets
1/2 avocado, sliced or mashed
1.5 tbsp vegan mayo
1/3 cup of edamame, defrosted
1/4 small cucumber, sliced
For toppings: avocado, radish, cucumber, vegan caviar, sesame seeds, etc.
Instructions
- Wash the rice with running water, until the water is clear, and there is no more starch coming out of it. Add rice and about a cup of water to a pot and bring to a boil. Cover and lower heat, and cook for about 10 minutes (or according to package instructions). Let rice cool down completely.
- Once rice is cold, add vinegar, sweetener and a large pinch of salt, and using a wooden spoon mix everything together.
- Cut nori sheets into circles to fit a small round springform cake tin (mine is 11 cm/4.3 inches). Or you can also keep the sheets as they are, and just fold the sides onto the cake. That way you’ll only see the layers when you slice the cake.
- To assemble the cake, place a nori sheet on the bottom of your springform cake tin. Top with avocado slices, then a half of the seasoned rice.
- Add another nori sheet, and spread mayo on top. Then edamame and cucumber slices, and the rest of the rice. Finish it with another nori sheet. Make sure the layers are always slightly pressed down and even.
- Right before serving pop the springform pan open, and place the cake on a serving plate. Arrange toppings on top. I used more avocado, cucumber, and edamame, plus some radish slices, black sesame seeds, and vegan wasabi caviar here. Enjoy!

It’s an algae based treat, it tastes pretty much the exact same as real caviar, and also have the same texture. It’s very common here in Germany, you can buy a version in most supermarkets next to real caviar 😉

Vegan caviar is made of algae and it tastes pretty much like real caviar. It is very popular here in Germany, they sell it in most supermarkets (and Ikea, for example). The wasabi caviar I used here is from a danish brand called ‘Cavi-art’, it’s seriously addictive 😉

Yeap, a blink and you’ll be 40!!! It definitely goes too fast and it goes faster from decade to decade… (I just turned 40, so I know). But life gets better actually, much better now than it was when I was in my 20s, I think it has something to do with finally knowing who I am and where I am going. I would not go back. OK, I would gladly take the looks, but otherwise I am happy to be where I am now. Don’t put yourself down, it really gets better as you go. The sushi cake is stunning, I adore sushi, no matter if vegan or not, I could eat it every day!

Good question! The chopsticks are just decorations on the picture, I always eat this with my hands.
My BF uses fork and knife though, but I’m way too messy for that 😅
