Vegan Tofu Cream Cheese

Ingredients

400 g/14 oz smoked tofu, cut into smaller pieces
1 lemon, juice
1.5 tbsp white miso paste
1 clove of garlic, minced
2 tbsp nutritional yeast
1/4-1 cup of unsweetened plant milk *
1/2 tsp smoked paprika
1/4 tsp chili flakes
salt, pepper


Instructions

  1. Place tofu, lemon juice, miso, garlic, nutritional yeast, and spices in a blender or food processor, and start processing. Start to add milk (start with 1/4 cup), and blend until completely smooth, and reached desired consistency. The spread will thicken in the fridge. Enjoy!

Notes

1/4 cup of milk will give you a nice, thick cream, while 1 whole cup will make the spread very thin. I usually use 1/3-1/2 cup of milk here, but it mainly depends on the type of tofu you use and what consistency you are looking for.
