Warm Cabbage Salad

Cabbage is rich in vitamin A, vitamin C, it is a great source of fiber and sinigrin, which helps in cancer prevention. Cabbage, especially steamed cabbage has some special cholesterol-lowering benefits too.

Ingredients

Scale
  • half of a red cabbage
  • 1 avocado
  • 1 pear
  • 3 scallions
  • 1 garlic clove
  • large handful of walnuts
  • sunflower seeds
  • 1 tsp coconut oil
  • 1 lime
  • 1 tbsp extra virgin olive oil
  • 2 tbsp tahini
  • salt, pepper


Instructions

  1. Heat the coconut oil in a large skillet. Shred the cabbage very thinly using a knife or a mandolin, chop the garlic into small pieces and toss them in the skillet. Stir and cook for 3-4 minutes, so the cabbage softens up a bit.
  2. Roast the walnuts, cut the avocado and pear into small cubes, finely chop the scallions and mix everything together with the cabbage in a large bowl.
  3. For the dressing mix together a juice of a lime, some extra virgin olive oil, tahini, salt and pepper. Pour the dressing on, mix well and sprinkle some sunflower seeds on the top. Enjoy!

    Okay, so but where are you hiding YOUR ugly photos?? ‘Cause I don’t see ’em anywhere, E! And I’m dialing it waaay back to 2014. 😉 You might be the only person on earth who can actually make me crave salad. Plus, you always inspire me to expand my produce horizons. Who does that??? Haha. your photography totally made me look at cabbage differently. Also, the combo of avocado and pear–I can almost taste it. 🙂 So when we finally meet up IRL, we’re going to the farmer’s market!       So funny you say this, cause I feel the exact same way with you and sweet stuffs. I’m not very crazy about dessert normally, but since I discovered your blog I’m craving all kinds of sweets all the time. And not just craving, even making them! If you knew me IRL, you’d understand what a crazy thing that is! Only you can make me wanna eat sweets all the time 🙂
