This super simple 4-ingredient avocado and coconut salad dressing is incredibly creamy, healthy and delicious! Use it on any of your favourite salads, it’s delicious with leafy greens, roasted veggies or any grain salads.
It all started with half can of coconut milk in the fridge. We just had a sweet-potato-chips-with-guacamole-movie-watching evening, and I noticed the milk in the fridge. It bothered me so much, I had to use it up that very second. First I thought of a coconut dipping sauce but I didn’t feel like making an other bowl dirty too. So I poured in a tiny amount of coconut milk to the blender where the guacamole was waiting for serving. I turned on the blender and 5 seconds later I didn’t want to believe how genius it tastes. So I added more and more and I was so happy I did! Because it tastes like heaven!
Of course it didn’t take much longer to discover this salad dressing, which is absolutely perfect too.
So actually this post is not about this salad dressing, but the simple fact that coconut and avocado are the best thing ever together! As a dip, as a salad dressing, as a pasta sauce, as a bread spread or even as a smoothie (don’t forget to leave out the garlic that way!)

- Total Time: 5 mins
- Yield: 1 small jar 1x
Ingredients
- 1 avocado
- 1 lime, juice
- 4 tbsp coconut milk
- 1 clove of garlic
- 1/4 cup of water
- salt, pepper
Instructions
- Add avocado, lime juice, coconut milk, garlic and water to a blender and process until completely smooth.
- Keep the dressing in an air-tight jar in the fridge for up to 3 days. Enjoy!
Notes
Try the dressing with fresh orange juice instead of water for an even cooler taste!

Avocados are big in this house, too! I didn’t have any coconut milk but found a small container of Greek yogurt with coconut. (thought i bought plain yogurt) So 1 avocado, lemon juice, 3 drops hot sauce, garlic and salt. served with Romaine. Delicious. So now I am wondering if this would be good for a cold summer shrimp dip as well? The coconut really stands out and I have some purist friends that will shrug at lettuce and coconut. My son and I loved it on a salad. Thank you for upping my taste buds.

I am so happy you liked it, the addition of hot sauce is such a great idea!
I don’t think I have ever eaten shrimps in my life, so I am not sure if this would work well there too. But I love this dressing/dip for veggies, breadsticks and basically every single finger food 🙂
You could actually fully omit the coconut, if your friends are not into it. I often use a few tablespoons of soy yogurt or oat cream instead, or when I want something extra fatty I use tahini or almond butter. Not the same as this version, but still very delicious!

Hi there! I just want to make sure I am on the same page: you’re talking about using full-fat CANNED coconut milk, right? So, what should be the fat-to-clear liquid ratio when scooping out the contents of the can? I also felt I should write this comment so other reders knew not to reach for their carton of coconut milk, which has practically no taste, tecture or delicious creamy coconut fatty-stuff for lack of a better word. Hi Gigi,
Yes, I’m talking about full fat canned coconut milk here. I personally like to use the fatty part so the result is creamier, especially when I use this dressing as a dip or spread. But it also works with the watery part, if you prefer a lighter version. I’d say if you like a strong coconut taste (I loooooove that!), then definitely go for the thick, creamy coconut cream 🙂

just came across your recipe as I was searching for a dressing to serve with potato salad. I was at a dinner some time ago and one of the ladies made potato salad using coconut mild to make the dressing. As some persons are not quick to give out their recipe I thought I would search the internet to assist me. Thanks for your recipe although it has avocado in it. Is there one without the avocado?

Unfortunately I only have this recipe for a salad dressing with coconut, so it’s most likely not the recipe that lady used. However, it’s very delicious, and the avocado is not overpowering, so you might like it too 😉

I stumbled across this recipe looking for a dressing to try out. I had an avo and needed it to turn into something. I tried it and so love it, my hubby was having it as is and on everything. I was just pondering if it can be frozen. I wld love to make for Xmas but I think our avo season will be over by then so I want to make it now

Regarding freezing – I had mixed results. Sometimes I had to put back the defrosted dressing to a blender, because it completely separated. Other times it was perfectly creamy after defrosting….I’d guess the result depends on the fat content of the coconut milk.
So you can definitely experiment with freezing, however you might have to blend it again. I usually freeze my dressing and sauces in ice cube trays, I think that works best.
BTW you can also freeze avocados. Then simply prepare the dressing with the thawed avocados. I do this whenever I get a bunch of avocados that are about to go bad 🙂
