Berry Basil Popsicles

What says summer more than a cold and delicious popsicle? I am not even a big fan of sweets, but when it’s hot outside all I wanna eat is ‘nice’ cream and quick to make popsicles. These berry basil popsicles are so wonderfully refreshing and flavourful, they are perfectly sweet, slightly tart and so special with the basil. The best ever fun fruity summer treat!

Berry Basil Popsicles

I actually really eat crazy amounts of berry-herb popsicles. They are the best. And I love so many different combinations! I’ve tried and loved basil, mint, tarragon, lemongrass, anise, black pepper and ginger with random combinations of strawberries, blueberries, blackberries, raspberries, red and black currants. You only have to adjust the sweetness depending on how sweet you like your popsicles. Simple and so cool to make!

Ingredients

Units Scale
  • 1 1/2 cup of sliced strawberries
  • 1 cup of mixed berries (I used raspberry, red currant and blueberry)
  • 10–20 fresh basil leaves
  • 1 tbsp lemon juice
  • 1–3 tbsp maple syrup (optional)


Instructions

  1. Add every ingredient to a food processor and blend until smooth.
  2. Pour the mixture into popsicle molds and insert popsicle sticks. Freeze overnight. Enjoy!

    Oooooh, the idea of mixing berries and herbs makes my mouth water. Sounds so delicious.

    Okay, so for Christmas I asked for a popsicle mold. And I got one. Then I put it away in the pantry. Where it is STILL sitting!?!?!?! Seriously, what is wrong with me? Alright, no more excuses. Breaking that bad boy out and making some berry basil pops 😉

      I had a popsicle mold for ages but never used it because of the ugly blue plastic sticks it came with. But then I got 100 pieces of these wood sticks and now I am totally obsessed with making popsicles 😉

    I love these!! I would have never thought to put basil in popsicles but I bet it just tastes awesome with the berries! It is one of my favorite summer herbs, so why not put in popsicles?! And the color is great too! I could go for a few of these right now 🙂

      I really love to use basil in basically anything. It’s my favourite herb, plus it’s the only one that grows in my window no matter what I’m doing 😉
