Carrot and Coconut Breakfast Bowl

This carrot and coconut breakfast bowl is just an other super easy and quick idea. It is a chia and oat mixture soaked overnight in coconut milk and carrot juice spiced up with cinnamon, peanut butter and a few slices of banana. That’s it, a sweet, filling, simple and delicious breakfast.

I don’t know what happened in the last year, but I really enjoy a good sweet breakfast nowadays. I used to absolutely hate it, just the idea of it made me sick. Now I love my porridges, chia puddings, milkshakes and of course smoothies….times change, I guess.

Fun fact: This recipe is basically the sweet breakfast version of this soup. Isn’t it cool? I love ingredients which are great in savory and sweet dishes as well! I highly recommend you to try it out, I can promise you, the lovely orange color will make your day start wonderful.

Ingredients

Units Scale
  • 3 tbsp chia seeds
  • 4 tbsp oat
  • 1 cup of coconut milk
  • 1/2 cup of carrot juice
  • 1 tsp cinnamon
  • 1 banana
  • 1 tbsp peanut butter
  • maple syrup (optional)


Instructions

  1. Place the cinnamon, chia seeds and the oat with the milk and carrot juice in a bowl and stir them well together. Cover the bowl and store it in the fridge overnight or at least a few hours.
  2. Once the mixture softened down take it out from the fridge. Add the peanut butter and the sliced bananas. You can sweeten it if needed. Mix well together. Enjoy!

        Oat is what oatmeal is made of. You can use for this recipe any type of oats, for example old fashioned oats or rolled oats 🙂

      I love carrot and carrot juice, I often use them in my smoothies, so why not in my porridge or chia pudding? 🙂

    What a great idea for breakfast! I have a hard time eating, especially sweet things, in the early morning but love them later in the day- like 10ish! This and a giant cup of tea sound so lovely! Pinned!

      That is exactly how it started with me…since I was a child I didn’t like sweet things at all, then I started to eat them occasionally as afternoon snack, and now I am also eating sweet breakfasts, let’s say once a week. Totally weird 😀

      Hey Sara,
      unfortunately chia seeds are expensive here too, but you need actually a tiny amount, so if you buy some it will last for a long time!
      I am not sure you how can substitute chia seeds, it has a pretty unique texture and neutral taste. It won’t be the exact same, but you can just simply leave out the chia, overnight oats are delicious too! Or if you’d like to have the gel texture, you can add a bit of agar agar.

    Great and tasty idea. Question please: Do you make your own carrot juice or buy it at the store? Which one would you recommend?

      Hi Paola,
      Sometimes I make my own when I have way too much carrots at home, other times I just buy one in a supermarket. I don’t have a preferred brand though, usually I’m just happy if I find one without honey 🙂
      If you live in Germany Alnatura and Demeter both have a delicious carrot juice without honey, I can recommend you those. Unfortunately I don’t know the juice brands in other countries…
