Chia Pudding with Mango Ice Cream

My mom discovered my blog (Szia Anya!), and she started to be really interested in chia puddings. She has already tried out my pumpkin spice one, but now I thought this one could be closer to her taste, since she really loves mangoes. Who doesn’t, right? (I used to hate them, but it’s another story….)

Chia Pudding with Mango Ice Cream

The recipe is as easy as all the chia pudding recipes, you don’t have to do a lot more than mixing the ingredients together, then wait for a few hours. I would recommend to soak the cashews for 4-8 hours, but 1 hour will also do. Same goes for the chia-oat mixture.

The chia pudding with the cinnamon is very warming, the mango-banana-vanilla ice cream is fresh and cooling, so they are perfect together. You can blend a few mint leaves to the ice cream too, to make it extra refreshing. I served mine with some almond and dried cranberries.

Ingredients

Units Scale
  • for the ice cream:
  • 1 mango
  • 1 frozen banana
  • 1/2 cup of cashews
  • 1 vanilla bean
  • for the pudding:
  • 1/2 cup of plant milk (I used almond milk)
  • 2 tbsp chia seeds
  • 2 tbsp rolled oats
  • 1 tbsp agave syrup
  • 1/2 tsp cinnamon


Instructions

  1. Start by soaking the cashews for a few hours. In an other bowl mix together the chia seeds, the oats, the milk, the cinnamon and a spoon of agave. Let it set for at least an hour.
  2. Peel the mangoes and place them in a food processor with the frozen banana, vanilla bean and the soaked cashews. Blend until creamy. You can add a splash of milk so it blends easier.
  3. Layer the pudding and the mango cream in a glass and add your toppings. Enjoy!

    How wonderful you’ve introduced your mother to chia pudding! My mom thinks it is kinda funny. She doesn’r say it, but I know she thinks it 😉 Looks wonderful!

      Hahaha, I think my mom also thinks a bit it’s weird, first she said: interesting consistency. But I have to say first time I tried it I also thought it’s funny, so probably it just takes some time to get used to it. Now I love chia puddings so much!

    This looks YUM!
    We don’t get chia seeds where i live, but I hear basil seeds come close. Have wanted to try these for a while. What an awesome start to the day!

      I have never tried basil seeds, but saw some amazing drink recipes with it, I’d really like to try them out!
      By the way have you tried ordering chia seeds? There are a lots of companies shipping worldwide. Sometimes I also struggle buying chia near me, so ordering online is always a great option (plus usually cheaper than in any shops)

    Ok, I have to admit that I’ve never made or eaten a chia pudding before! I see them all the time and they always look so good, but for some reason I’ve never had one! I’m a big ice cream fanatic, so I think this recipe has convinced me! I also love mango 🙂

      I also waited so long to try my first chia pudding, and now it’s one of my favorite breakfast option! I make a mixture of the chia and some plant milk, add any fruits, and that’s it.
