BBQ Pizza recipe from The Friendly Vegan Cookbook.

Michelle Cehn (World of Vegan) and Toni Okamoto (Plant-Based on a Budget) have just released their new book The Friendly Vegan Cookbook: 100 Essential Recipes to Share with Vegans and Omnivores Alike. To celebrate these lovely ladies, I wanna share a really cool recipe from their book with you today. Plus one of you can win a copy of The Friendly Vegan Cookbook.
The Friendly Vegan Cookbook: 100 Essential Recipes to Share with Vegans and Omnivores Alike is one of those books that I think every vegan should have on their bookshelf. Not because it’s full with revolutionary or super fancy recipes, and not because it’s one of those vegan basics cookbooks. But simply because this book is a great collection of fundamental and totally crowd-pleasing vegan recipes.
You’ll find all kind of delicious recipes in this book, from beloved breakfast foods like overnight oats, banana bread, and blueberry muffins, to all-time favorite pasta dishes such as stuffed shells, pesto pasta, or lasagna. And many more: beefy tacos, minestrone, potato salad, BLT sandwich, fudgy brownies, ice cream cake…you get what I mean, right?
I think this book is a great buy for you if you are a new vegan or just vegan curious. Michelle and Toni will show you how to make well-known and loved plant-based goodies. And they’ll teach you how to veganize old favorites.
The Friendly Vegan Cookbook is also something for long term vegans for daily inspiration. I’ll be definitely flipping through the pages whenever I have those ‘I don’t know what to cook’ moments and desperately need recipe ideas. Or when I need a trusty recipe for vegan donuts or pot pie. Because after almost 6 years of veganism I have to admit I still never had vegan donuts or a pot pie.

BBQ Pizza
To get a sneak peek into The Friendly Vegan Cookbook I wanted to share this BBQ Pizza recipe with you. It’s a great example of what ‘Essential recipe to share’ means. Just a good ol’ pizza, topped with a really delicious combo: cheese, nuggets, veggies, and barbecue sauce. Trust me, you’ll like this!

BBQ Pizza
- Total Time: 40 minutes
- Yield: 4-6 1x
Ingredients
- 1 tablespoon canola oil
- 1 medium red onion, sliced
- 1 medium green bell pepper, sliced
- 4 large cloves garlic, thinly sliced
- 1 cup diced pineapple
- 1 cup barbecue sauce
- 1 prepared pizza dough, rolled into a large crust
- 2 cups shredded vegan mozzarella cheese (optional)
- 8 frozen vegan chicken nuggets (any brand) (optional)
Instructions
- Preheat the oven to 190°C/375°F.
- In a large skillet over medium-high heat, heat the canola oil. Add the onion and bell pepper and sauté for about 5 minutes, until softened. Add the garlic and pineapple and sauté for 2 minutes.
- Spread the barbecue sauce on the prepared pizza dough. Evenly sprinkle the bell pepper mixture and vegan cheese (if using) on the pizza. Evenly distribute the vegan chicken nuggets (if using) over the pizza.
- Bake for 15 minutes (if you’re using a prebaked store-bought crust, follow the baking directions on the package).

I just made this tonight and it was great! It was super easy and fast as long as you put the dough out ahead of time as directed. I’m not a big fan of pizza because I don’t like tomato sauce so this was awesome!! Definitely a keeper.
