Healthy and filling lentil salad with sweet grapes, fresh basil and a delicious maple and mustard dressing. Super delicious and super satisfying!
This is a very good salad. One of the best ones, actually. You can eat cold or warm, both ways delish! Beluga lentils are an amazing and cheap source of protein and fibre. Easy to make, you don’t have to soak them, just cook for about 15 minutes (and they also hold their shape after cooking!). They have a slightly nutty taste and a lovely chewy texture. They taste especially good with the sweet grapes, some thyme and the orange dressing.
And it’s beautiful! There is something so satisfying in dark food, I just love this color!

- Total Time: 25 mins
- Yield: 3-4 1x
Ingredients
- 1 cup of beluga lentils
- 2 cups of grapes
- 2 spring onions
- 1 handful of basil
- 1 tbsp mustard
- 1 tbsp maple syrup
- 1 tbsp thyme
- 2 tbsp olive oil
- 1 lime
- 1 orange
- salt, pepper
Instructions
- Cook lentils for 15-20 minutes until tender but not falling apart. Drain and let it cool a bit.
- Cut grapes in half, slice spring onions, chop basil finely and add to a big bowl with lentils.
- For the dressing mix together mustard, maple syrup, thyme, olive oil, lime and orange juice with salt and pepper. Pour over the salad and mix well together. Serve with orange zest. Enjoy!
