It’s already December, Christmas is almost here,and I really started to be excited about it. Just a few weeks, wow, time goes by so fast. I think a lot of presents and probably even more of the Christmas dinner. Having a lots of dinner ideas, I thought of starting a little section, where I show you some of my Christmas recipes. Nothing special, just vegetarian or vegan dishes, which from one hand are festive and special, so not something we eat everyday, but from the other hand things, which don’t take ages to prepare. I surely don’t want to spend all day in the kitchen.

I really felt today eating something orange or red. I needed pumpkin, autumn food, and something what warms me up. It is just so cold, soups are lifesavers for me this time. I had a small pumpkin and a few bell peppers in my fridge so they seemed to be the perfect combination.

I eat very often quinoa salads. Let’s say 2-3-4 days a week for sure. It is just something I can make so easily, especially if I cook a bit more quinoa once a week, so I can just use it up the next days. I really love it warm, right after the quinoa is cooked or also cold, out of the fridge. For me quinoa salads are just the most perfect way to use up any leftover greens, fresh or roasted veggies, nuts or herbs.

Just an other soup recipe, I can’t help, all I wanna eat nowadays is soup. I think that one of the best ways to stay warm is to get a big bowl of hot soup. Great thing is that I can also prepare a large amount of these soups and eat it the next days. Anytime I would feel I need a little energy and something to warm me up, I just get a bowl of a soup. Yummy!

I love, love, love small vegetable or grain cakes/patties. They are mostly simple and quick, perfect for a snack, in a sandwich, with a salad or to dip in small wonderful sauce.
