Chickpea Flatbread with Garlicky Spinach

Vegan chickpea flatbread with garlicky spinach from Zizi’s cookbook.

This simple vegan and gluten-free 2-ingredient chickpea flatbread makes a great breakfast or weeknight dinner. It’s easy to make, high in protein and it’s totally customisable. You can play around with your favourite spices here, or you can even add extra veggies to the flatbread. The garlicky spinach and the slightly nutty flatbread are a match made in heaven, but hummus, a spiced homemade cashew cream cheese or a simple tomato sauce go really well with this chickpea flatbread too.

Today I do something I’ve never done before and to be honest I thought I’ll never ever do here: I write in Hungarian! Whaaaaaat?! Yes, it’s happening. Since this recipe is from Nagy Zita‘s Vegan Breakfast cookbook (which is only available in Hungarian at the moment), I guess it would make more sense to write about it in Hungarian. Sorry, guys, I promise I will not make a habit out of this.

Anyways, even though her books are probably not something for you, if you don’t speak Hungarian, I’d still highly recommend you to follow her on Instagram, because she posts there in English. And try her recipe, it’s really good!

Ingredients

For the chickpea flatbread

  • 100 g chickpea flour
  • 300 ml water
  • 1/2 tsp thyme
  • salt, pepper

For the garlicky spinach

  • 500 g fresh spinach
  • 2 cloves of garlic, minced
  • 3 tbsp plant milk
  • 1 tbsp olive oil (optional)
  • pinch of nutmeg
  • salt, pepper


Instructions

Chickpea flatbread

  1. In a large bowl whisk together chickpea flour, water, thyme, salt and pepper. Let rest for 30 minutes.
  2. Preheat oven to 230Β°C/440ΒΊF. Grease a 20×30 cm/8×12 inch baking dish (or use a silicon one) and pour the batter into the dish (it should be 5 mm/0.25 inch thick). Bake for 20 minutes or until golden-brown.

Spinach

  1. Meanwhile heat a large pan over medium heat. Add spinach, olive oil or 1-2 tablespoons of water, and cook for 4-5 minutes. Add garlic and season with nutmeg, salt and pepper. Cook on for 5 minutes, then add milk. Mix well and cook for another 3 minutes.
  2. Serve immediately with chickpea flatbread. Enjoy!

Ha esetleg valami megmagyarΓ‘zhatatlan okbΓ³l nem ismernΓ©tek Zizi blogjΓ‘t, akkor sΓΌrgΕ‘s bepΓ³tolnivalΓ³tok van.Β Zizi blogja sok-sok Γ©ve az egyik kedvencem, kΓΆrΓΌlbelΓΌl 6-7 Γ©ve rendszeres olvasΓ³ja vagyok. Kezdetekben mΓ©g fΕ‘kΓ©nt vegetΓ‘riΓ‘nus receptjei voltak, az utΓ³bbi pΓ‘r Γ©vben viszont mΓ‘r Ε‘ is csak nΓΆvΓ©nyi Γ©teleket fΕ‘z. Kedvenceim a klasszikus, magyaros receptjei. A VegΓ‘n Reggeli, Zizi elsΕ‘ kΓΆnyve 2016-ban jelent meg. A kΓΆnyvben tΓΆbb, mint 70 vegΓ‘n reggeli recept szerepel, ezek mind termΓ©szetes, nΓΆvΓ©nyi alapanyagok felhasznΓ‘lΓ‘sΓ‘val kΓ©szΓΌltek. Γ‰n mondjuk vitatkoznΓ©k itt Zizivel, mert a legtΓΆbb recept szerintem tΓΆkΓ©letes vacsorΓ‘ra vagy dΓ©lutΓ‘ni nassolΓ‘sra is.

Extra pont amΓΊgy a kΓΆnyvnek, hogy alapanyagok alapjΓ‘n van fejezetekre osztva. Mivel nΓ‘lam mindig tele a konyha random maradΓ©k zΓΆldsΓ©gekkel, gyΓΌmΓΆlcsΓΆkkel Γ©s magokkal, imΓ‘dok Γ‘tlapozni egy-egy ilyen fejeztet. Instructions

Pite

  1. Egy tΓ‘lban keverjΓΌk csomΓ³mentesre a csicseriborsΓ³lisztet a sΓ³val Γ©s kakukkfΕ±vel. Folyamatos kevergetΓ©s mellett lassan ΓΆntsΓΌk hozzΓ‘ a vizet, amΓ­g sima, hΓ­g tΓ©sztΓ‘t kapunk. TegyΓΌk fΓ©lre 30 percre pihenni.
  2. MelegΓ­tsΓΌk elΕ‘ a sΓΌtΕ‘t 230 fokra. Egy 20×30 centis tepsit kenjΓΌnk ki olΓ­vaolajjal (vagy hasznΓ‘ljunk szilikon formΓ‘t) majd ΓΆntsΓΌk bele a tΓ©sztΓ‘t (kb. 4-5 millimΓ©ter vastag legyen).
  3. SΓΌssΓΌk 20 percig, amΓ­g aranybarna nem lesz a teteje.

SpenΓ³t

  1. AmΓ­g sΓΌl a pite, kΓΆzepes hΕ‘fokon hevΓ­tsΓΌnk fel egy serpenyΕ‘t. Γ–ntsΓΌk bele az olΓ­vaolajat (vagy 1-2 evΕ‘kanΓ‘l vizet), majd tegyΓΌk bele a spenΓ³tot. PΓ‘roljuk 4-5 percig, amΓ­g egy kicsit ΓΆsszeesik, adjuk hozzΓ‘ a fokhagymΓ‘t is. ÍzesΓ­tsΓΌk sΓ³val, borssal Γ©s szerecsendiΓ³val.
  2. FΕ‘zzΓΌk tovΓ‘bbi 5 percig, ekkor adjuk hozzΓ‘ a rizstejet. KeverjΓΌk Γ‘t, pΓ‘roljuk mΓ©g 3 percig ls tΓ‘laljuk a csicseriborsΓ³pitΓ©vel.

    I love chickpea flour, but I’ve only used it for making pancakes and some kind of frittata. Since I’ve been having a kick on flatbread lately, I know what I’m making next:) Chickpea + spinach = perfection!

    It looks lovely. I saw chickpea flour, but I didn’t use it before. Is the texture similar to a polenta?

      Thanks, Anca! I’m not sure if there’s a type of chickpea flour, that has a similar texture to polenta, the ones I’ve tried were always very fine flours.

    My Hungarian reduces itself to nemtudok (and no idea how to spell that!!!!) and the names of some typical Hungarian dishes that are eaten all across Transylvania. πŸ™‚ But I love this recipe, I have some chickpea flour in my pantry and was thinking it is time to use it for something before it expires… This flatbread sounds great! The spinach too.
