Grilled Nectarine and Zucchini Salad with Mint Dressing

This grilled nectarine and zucchini salad is a simple recipe yet looks and tastes amazing! It’s perfect for BBQ, picnic, a light dinner or in a beautiful sandwich with mixed greens. You can also add toasted pine nuts, almonds or croutons on top.

Grilled Nectarine and Zucchini Salad with Mint Dressing

This is one of my favourite grill recipes ever. Those lovely colors, oh my goodness, how could you resist? And the sweetness of the nectarines is just so heavenly and together with the mint it’s something truly special. If you have the chance to use outdoor grill don’t miss it, the recipe is going to be even better with the slight smokey taste!

Ingredients

Scale
  • 3 nectarines
  • 1 zucchini
  • handful of cress
  • handful of fresh mint
  • handful of fresh basil
  • 1 lemon
  • 1 tbsp olive oil
  • salt, pepper


Instructions

  1. Cut nectarines into half then slice them into 4-8 pieces. Slice zucchinis thinly lengthwise.
  2. In a grill pan grill zucchinis and nectarines for 2-4 minutes each sides or until they have grill marks.
  3. Meanwhile add basil, mint, lemon juice, olive oil, salt and pepper to a food processor and blend until smooth.
  4. Add grilled nectarines and zucchinis to a large plate with cress and pour over the dressing. Serve warm or cold. Enjoy!

    Did you say mint dressing?!! I need that right now! That sounds so amazing and perfect for the summer! I hardly ever grill fruit for some reason, but this salad looks like a good excuse to bust out the grill this weekend ๐Ÿ™‚
