New Potatoes with Lemon and Herbs

This is a very simple recipe but it just couldn’t get better. Salty new potatoes covered with lemony-garlicky-herby olive oil: my dream spring dish.

New Potatoes with Lemon and Herbs

New potatoes are such wonderful vegetables, they only need a pinch of salt, some herbs and lemon to become the most delicious food. I would say it’s the perfect side dish, but I eat them as a main dish (for breakfast, lunch and dinner). These potatoes bring so many memories for me, we always ate them around my birthday when family and friends got together. It also meant good weather and the almost end of the school. And it means of course super delicious food. So all my favorite things! ❤

Ingredients

Units Scale
  • 1/2 kg new potatoes
  • 3 tbsp olive oil
  • bunch of fresh herbs (I used rosemary, thyme, basil, oregano, wild garlic)
  • 1 clove of garlic
  • 1 lemon
  • salt, pepper


Instructions

  1. Cook potatoes in salty water for about 15 minutes, until tender but not falling apart. Drain potatoes.
  2. Heat up olive oil in a large pan or wok and add potatoes. Cook for 5-10 minutes tossing occasionally until golden brown.
  3. Add chopped herbs, crushed garlic, salt, pepper and juice of a lemon and mix well together. Enjoy!
  • Prep Time: 5 mins
  • Cook Time: 25 mins

    New potatoes are so creamy and tender, I love them too. Fresh herbs and lemon would only make them better. Gorgeous pictures Evi!
