I eat very often quinoa salads. Let’s say 2-3-4 days a week for sure. It is just something I can make so easily, especially if I cook a bit more quinoa once a week, so I can just use it up the next days. I really love it warm, right after the quinoa is cooked or also cold, out of the fridge. For me quinoa salads are just the most perfect way to use up any leftover greens, fresh or roasted veggies, nuts or herbs.

Quinoa and Cauliflower Cakes
The original recipe is from The Green Kitchen Stories book, so lovely. I used a bit more cauliflower, a bit less quinoa, tofu instead of feta and so on. It takes a bit of time to make, but the end result is amazing: fresh, filling, healthy and has a great combination of textures and flavors.
These are delicious served with a simple green salad and the leftover next day in a sandwich.
