Quick Pickled Rainbow Cauliflower is a super cute snack.
Pickling is always fun. Using a quick and easy method makes it even better. And a whole new level of cool is if you color those pickled goodies. This recipe for Pickled Rainbow Cauliflower is combining all those great things above to give you a tangy-sweet-savory snack with the perfect crunch – yay!
Today’s recipe is nothing new or revolutionary, simply just an idea. But I find it so cute, I have to share it with you.
I really love quick pickling. You can find on my blog a lots of pickled stuff. Red cabbage, radishes, green tomatoes, tamari veggies, and my personal favorite, red onion. I use pretty much the same method every time. There are little changes here and there, depending on my mood, or what not, but at the end it’s always the same: vinegar + water + sweetener + salt.
This recipe for Pickled Rainbow Cauliflower follows my trusty little method once again. The only difference is that this time these babies are not only delicious, but also super pretty to look at, thanks to some natural coloring.
Of course, the rainbow colors are totally optional, but if you are looking for a cute little project, you should definitely color those boring white cauliflower florets!
On the pictures you can see my beetroot-garlic version, my turmeric-coriander-mustard one, and a simple jalapeño one. But there are so many cool colors to try! Some of them are for example:
- Yellow – turmeric (both the fresh and powder form works)
- Pink – sliced, fresh beetroot, or beetroot juice
- Orange – mix of turmeric and beetroot
- Purple – shredded red cabbage
- Green – matcha, spirulina, or juiced leafy greens, like spinach
- Blue – blue spirulina
- Brown – black tea
You can of course mix and match all these colors. Depending on how much of the colorings you use, you can go anywhere from a slight, pastel tint, to some real vibrant and lively colors.
Regarding the flavors here, you have a lots of options as well. You can keep it all simple, having a sweet and tangy pickled veggie taste. But you can also add lots of goodness to customize this Pickled Rainbow Cauliflower recipe to your liking. My favorite add-ins are:
- garlic
- onion
- coriander
- mustard seeds
- jalapeño, or any other type of chili pepper
- bay leaves
- fresh herbs, like rosemary, thyme, summer savory or sage
- black, pink, or white pepper corns
- cumin
- caraway seeds
These are just some of the flavorings options I’ve personally tried and liked, but there are many more to use. So get creative!

PrintPickled Rainbow Cauliflower
- Total Time: 10 minutes
- Yield: 2 large jars 1x
Ingredients
- 1 head of cauliflower, cut into smaller florets
- 11 oz/350 ml apple cider vinegar (or other vinegar of your choice)
- 34 oz/1000 ml water
- 2 tsp salt
- 3–4 tbsp maple syrup (or use sugar, agave, etc.)
- flavorings and colorings of your choice (see above)
Instructions
- Place vinegar, water, salt, and maple syrup to a pot, and bring to a boil. Cook for 2-3 minutes, or until salt dissolves.
- Fill jars with cauliflower florets, and add flavorings and colorings of your choice. Use one large jar, if you make one flavor/color, or multiple small ones for each flavor/color.
- Pour hot brine over cauliflowers, then let cool completely before placing in the fridge. Pickled cauliflower tastes best, if you let it marinade for 2 days before serving.
- Cauliflower will keep for 3-4 weeks in the fridge. Enjoy!
