Sometimes I have such strong cravings, I just can’t help myself and have to eat that food in maximum an hour or otherwise I can’t live on. I felt like this today lunchtime with warm creamy soups. I felt like I need any kind of warm soups and I could not think of anything else.
Red lentils are my go to soup ingredients. First of all, they don’t need any soaking. Then they are cooked in a few minutes. And you can season the soup in so many ways.
I chose this time a mediterranean way for the soup with thyme, basil, dried tomatoes, but red lentils are awesome with any kind of seasoning.

Ingredients
- 1 cup of red lentils
- 1 onion
- 4 cloves of garlic
- 6 dried tomatoes
- 0.6 liter hot water or vegetable stock
- 1 tsp thyme
- 1/2 tsp chili
- 1 tsp basil
- 1 tsp rosemary
- salt, pepper
- coconut oil
Instructions
- Heat a little coconut oil in a saucepan. Chop the onions and garlic finely and add to the coconut oil. Fry them for a few minutes.
- Add the lentils and spices and fry for one more minute. Add the hot water or veggie stock and the dried tomatoes and cook for about 15-20 minutes.
- Once everything is cooked, pour everything in your blender and blend until smooth. Serve warm with a little bit of lemon juice. Enjoy!
