Roasted Jalapeños

These simple and quick roasted jalapeños with pine nuts and lime juice are the perfect summer snack. They are juicy, crunchy, healthy and totally customisable: My favourite ways to eat them are with some tomato sauce or in a bulgur/couscous salad. But they also taste amazing with any Italian seasoning.

It’s lame to call this a recipe, but it’s so delicious, I had to share it with you. It’s my new favourite side dish and afternoon snack. In the last weeks we had them almost everyday, not kidding. So good, so so good, you have to try them!

Ingredients

Units Scale
  • 300g jalapeños
  • 1–2 lime, juice
  • 2 tbsp olive oil
  • 1/3 cup of pine nuts
  • 1 clove of garlic
  • salt, pepper


Instructions

  1. Start by toasting pine nuts in a pan, then set them aside.
  2. Heat up olive oil in the same pan, then add crushed garlic and jalapeños. Roast them for 5-10 minutes or until they are soft and almost charred.
  3. Squeeze lime juice on them and season with salt and pepper. Serve with pine nuts and lime wedges. Enjoy!

Notes

Jalapeños are extremely hot. If you can’t eat them, try the recipe with a milder pepper. I would for example recommend padrón peppers, they have no heat.

      It’s definitely a man pleaser recipe! Sometimes jalapeños can be a bit too spicy for me, but I’ve never heard any complain from guys 😉

    I absolutely love using jalapenos in recipes, but I’ve never thought about roasting them and using them as the star of a recipe…what an awesome snack idea! Definitely going to give this one a shot!!

    I Looove Jalapenos, Evi. This is totally mouthwateringly delicious and something I look forward to trying, as I’ve never roasted them! Only have had them raw and pickled. Love the simplicity of this recipe, yet it highlights such a delicious veggie! Thank you for this Evi!

      I love roasting them, they are not that hot that way. Pickled jalapeños sound great too, I’ve never tried them like that!

    It looks delicious! Are these those Bratpaprika that one can sometimes buy in Supermarkt here in Germany? I always wanted to buy some but wasn’t sure what to do with them. I would like to try this.

      These are a bit spicier, but this recipe is great with that Bratpaprika too! This one is more like a snack for me, because they can be a bit too hot sometimes, but from the Bratpaprika ones I can eat kilos 😀

      Hahaha, I have to admit I also can’t eat too much of them. Sometimes I can’t even handle one piece. I usually choose a milder pepper for myself and give jalapenos for the men. Somehow they all love it 😀
