This soba noodle salad is so easy to make, it’s gonna be your new favourite. This dish is healthy, spicy, very refreshing, packed with crunchy veggies and an insanely creamy peanut-ginger dressing. Also super quick to make and keeps well in the fridge for days. Actually it gets even better if you leave it in the fridge for a while.
Soba noodles are one of my favourite go-to ingredients. They are so versatile and work amazing with many asian inspired dish. They taste delicious warm and cold too, so they are the perfect choice for a busy week: you can make a big portion and eat it all week. I like to add crunchy veggies and a creamy sauce, but you can be really creative here. Soba noodles are great with any nut butter, with tamari or soy sauce, or just with a simple citrus juice-oil combo. You can add any herb, nuts, veggies or even fruits (mangoes or plantains are great). It’s always gonna be yummy, I promise!

Ingredients
- 150 gr soba noodles
- 3–4 spring onions
- 1 cup of chopped carrots
- 1 bell pepper or 6 mini peppers
- 1 chili
- handful of roasted peanuts
- 2 tbsp peanut butter
- 2 tbsp peanut oil
- 1 tbsp maple syrup
- 1 clove of garlic
- 3 tbsp tamari or soy sauce
- 1 lime, juice + zest
- small piece of ginger
- water
- Sriracha
Instructions
- Prepare your noodles according to package instructions. Drain and rinse with cold water.
- Dice peppers, chili and carrots, slice spring onions and add to a big bowl with the cold noodles.
- Whisk together peanut butter, oil, maple syrup, tamari, grated garlic and ginger, lime juice and a little bit of water. For me the tamari is salty enough, but you can add additional salt if needed.
- Mix well together noodles, veggies and dressing. Serve with lime zest, peanuts and Sriracha. Enjoy!

Soba noodles are one of my favorite types of noodles to use. They taste great and I like that I can use them in cold dishes without losing flavor or great texture. Your soba noodles salad is wonderful, Evi. This would be great to make on a Sunday and pack for lunches during the week. 🙂

Soba noodles are such fantastic ingredients. Especially for cold dishes! I haven’t really found any other noodle which tastes great after more than a day in the fridge, so soba is just the best for summer time 🙂

This is absolutely delicious. I just made it so it’s ready when I get in from an exercise class later and can’t stop eating it. I added some fresh basil too which works really well and instead of peanuts, I toasted some cashew nuts. I love your recipes. I’m not a vegetarian but like to eat several meals a week that don’t involve meat and you are a great source of inspiration. Even my husband is a convert! Thank you.
