I eat very often quinoa salads. Let’s say 2-3-4 days a week for sure. It is just something I can make so easily, especially if I cook a bit more quinoa once a week, so I can just use it up the next days. I really love it warm, right after the quinoa is cooked or also cold, out of the fridge. For me quinoa salads are just the most perfect way to use up any leftover greens, fresh or roasted veggies, nuts or herbs.
This week I had quinoa salad first with sweet potato, then with pumpkin, then with roasted bell pepper, then the 4th bowl was this one, with sweet potato again. Nothing special, just a simple and easy bowl of wonderful ingredients.

Ingredients
- 1 large sweet potato
- 1,5 cup of cooked quinoa
- 1 avocado
- 2 large handful of rocket
- 1/2 pomegranate
- 1 handful of pine nuts
- 1 tsp cinnamon
- 1 tsp turmeric
- salt, pepper
- for the dressing:
- 1 tbsp tahini
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 clove of garlic
Instructions
- Preheat oven to 200°C. Cut your sweet potato into bite-size pieces, season with salt, pepper, cinnamon and turmeric and roast for about 25-30 minutes, or until fork-tender.
- Mix the quinoa with pomegranate seeds, some roasted pine nuts, a diced avocado and the rocket.
- Mix the olive oil, the tahini, the vinegar and the crushed garlic together for the dressing and pour over the quinoa. Add the warm sweet potatoes and serve warm. Enjoy!

Me too. But it is not the most budget friendly food….Plus I have no new recipes for the blog, since I am just eating quinoa everyday 😀
